Grain Free Banana Pancakes

My husband loves to have pancakes on the weekends.  This weekend, I decided to try a new recipe that one of my co-workers told me about - only three ingredients and no flour or sugar!  I was skeptical at first, but they turned out really well.  These banana pancakes were the same consistency as a grain-based pancake and they were soooo yummy.  My husband even asked me to make another batch!  Success!

Banana Pancakes

Grain Free Banana Pancakes

Ingredients - Makes four pancakes 

  • 2 bananas
  • 2 T almond butter
  • 2 eggs

Directions

  1. Mash banana, almond butter and eggs in a bowl until mixed to consistency of pancake butter.
  2. Heat 1 T coconut oil in griddle or frying pan over medium high heat.  Pour 1/4 cup batter onto the griddle.  Brown on both sides and serve hot.

You can add gluten-free chocolate chips, nuts, cinnamon, nutmeg or spice of choice to the batter.  I topped the pancakes with real maple syrup.
