If you read my post for the Wild Blueberry Cacoa Smoothie on Tuesday, you know one of my favorite fruits is the wild blueberry. For starters, wild blueberries contain a higher concentration of beneficial antioxidants, making them a powerful disease fighter. These berries are specifically rich in an antioxidant flavonoid called anthocyanin, which is responsible for the red, purple, and blue colors of many fruits, vegetables, and flowers. There is evidence to suggest anthocyanin pigments may have a therapeutic and preventative role in a number of diseases such as: cancer, diabetes, cardiovascular disease, and eye health.
Most wild blueberries are frozen at harvest, trapping in the flavor and antioxidant power. You can find them year-round in the frozen section of your grocery store. For this beverage recipe, I decided to veer from the traditional smoothie and make a refreshing drink - aka, a "cooler." You can also freeze the drink in popsicle molds for a treat in the summertime. If you like tart drinks, you will love this cooler. It reminds me of the old school Mr. Misty's from Dairy Queen (loved those back in the day!), but without all the refined sugar, additives, and food dyes.

Wild Blueberry Cooler - gluten-free, vegan - Serves 1 to 2
- 1 cup frozen wild blueberries
- 1/2 cup water
- 1/4 cup pomegranate juice
- 1 T fresh lemon juice
- 1 T raw honey
- 1/2 cup ice
- Place all ingredients in a Vitamix or blender and blend until smooth.
