If you have been following us for awhile, you know my husband is a cookie monster and a batch of cookies doesn’t last long in my house. I don't make desserts often because my husband is really the only one who eats them - I would much rather have something salty! Seriously, I am the one next to the refrigerator drinking pickle juice out of the jar. If I let myself, I could eat salt by the spoonful, especially Himalayan salt. I need to work on my gluten-free baking skills since I am fairly new to the wheat flour-free baking world, so I decided to test out a new cookie recipe.
My gluten-free peanut butter cookies are so delicious that I wanted to use a similar base. I switched up the flavors and created these tasty gluten-free cranberry almond chocolate chip cookies! This recipe is so very simple and requires only one bowl for mixing! Recently I have been using freshly ground almond butter and sunflower seed butter in place of peanut butter in recipes. I love the taste and texture of freshly ground almond butter and almond butter provides another opportunity for you to boost your nut intake; however, your almond butter intake should not predominately come from a cookie. :) Almond butter’s health benefits come from its content of calcium, copper, Vitamin E, magnesium, fiber and healthy fats. Almonds have more calcium than any other nut! And if you wash down that cookie with a glass a milk or homemade almond milk your bones will appreciate it!

Gluten-Free Cranberry Almond Chocolate Chips Cookies
Ingredients - gluten-free, dairy free
- 1 cup natural almond butter
- ¾ cup coconut palm sugar
- 2 Tablespoons 100% real maple syrup
- 1 pastured egg, beaten
- 1 tsp vanilla extract
- ½ tsp baking powder
- ½ cup dried cranberries
- ½ cup dairy-free chocolate chips
- Blend coconut palm sugar in blender or mini food processor until the texture of granulated sugar.
- Mix all ingredients together in a mixing bowl.
- Use a melon baller scoop to scoop dough onto parchment paper lined baking sheet.
- Bake at 350 degrees for 10 minutes.
